Veggie Fajitas

Here is a Tex-Mex recipe that would make your guest drool. The term fajita comes from the Spanish “Faja” with the mean strip. Veggie Fajitas are a tasty filling for your tortilla, which can be made with corn or flour. The base ingredients are bell pepper and popular condiments include guacamole, salsa, pico de Gallo, shredded cheese, refried beans, diced tomatoes.

it’s a complex dish, however fun to eat since each person can fill the tortilla in the way they like and top it up with hot sauce from the least spicy to the dankest one. You can get homemade hot sauces from Senhor Rito. The fire is a guarantee!

This vegan Fajitas is a dish I always cook when I have a quite big group of friends coming over for dinner. By shimmering the bell pepper until tender but crispy as well with different spices, the veggies become very tasty.

LET’S GET TO IT !

Grab a garlic clove and a withe onion, peel them both, then wash them carefully. Grab your cutting board and mince the garlic finely. 

Minding your finger, finely cut the withe onion in slices. Meanwhile preheat a non-sticky pan and add some extra virgin olive oli. When hot drop the garlic and the onion and let it cook until crispy and golden.

I like my Veggie Fajitas colourful so I usually buy the 3 types of pepper: green, yellow, and red. What your bell pepper. Take out the seed and the petiole. Slice them with the knife longwise, you should get 4-5 cm long stripes usually 1 to 2 cm wide. Now you have your fajas ! If you like really spicy you can slice a jalapeño and add it to the pan! AAA Warning! This is not for beginners!

Drop the bell pepper slices into the pan with the garlic and onion. To season, I add, a full tablespoon of paprika, a tablespoon of cumin, salt, and pepper to taste. I let it cook for 15 to 20 minutes stirring it frequently. If you feel that it’s sticking to the pan you can either simmer it with some drops of water. For a softer result, you can cover the pan with a lid and let it cook for more than 15 minutes until it reached your taste.
