This roasted veggies are perfect for meal prepping and you can just cook a ton of if and have for all week.
Here is a recipe that I have been doing for ages, it’s so good and so easy that literally I could eat it everyday.
I used zucchini, eggplants and potatoes but you can use the veggies you like the most.
Ingredients
Eggplant
Zucchini
Potatoes
Salt
Pepper
Paprika
Smoked Paprika
Cumin
Oregano
Leek
Parsley
Let’s get to this roasted veggies
Wash carefully all your veggies.
On a cutting board cut the eggplant and zucchini in about 1x1cm cubes then place them into a drainer with some sea salt to get rid of the excess water.
In the same time cut the potatoes and place them in cold water.
Meanwhile preheat the oven to 180°C on ventilated mode. In a small bowl mix all the spices adding salt, pepper, smoked paprika, paprika cumin and origano. Then place all your veggies into a baking tray over a baking paper sheet, dust with the spice mix and drizzle with oil. then massage the veggies with your hand and place it in the oven. Cook for about half hour and mix the veggies. in the meantime cut some leak and place in the oven on top of the veggies let it cook for 10 minutes and then mix again the veggies. Let it cook until golden brown.
Serve with some home made bread or cuscus and some fresh parsley. It’s great also with some plant based yogurt dressing.
