For a great New Years’ eve, I introduce you to the Italian style BIG with some ingredients I got from Italy. I got this idea when I walked into Lidl and I found the mushroom burger in the vegan section. And I thought it would be great for my NYE celebration. Let me know how you are going to celebrate NYE?! I’m so curious. But let’s get to the point this is how I remixed the B.I.G. Vegan Junkies iconic burger. Here it’s everything you need to prepare the perfect meal for the end of the year. For The B.I.G. remixed – Italian style I will use some mozzarella, rucola and sun-dried tomatoes.

Here what to do:
Preheat a non-stick pan and pour some olive oil. Meanwhile, peel and slice some onion. When it’s warm, drop your onion slices, add some salt, sugar and simmer with withe or red wine. Let it cook and add some Italian balsamic vinegar to glaze it. When you’ll have the balsamic caramelized onions ready set them aside. On another non-stick pan already warm pour some oil. Add one or two mushrooms burgers cook both sides. Meanwhile, slice your vegan mozzarella and lay a piece or two on each burger. Let it melt.
Prepare the burger.
Cut the bun in half, spread with some vegan butter, and toast it. Add some rocket salad then your burger with the mozzarella on top, some of the balsamic onions, and top it with 2-3 sun-dried tomatoes. Drop some balsamic vinegar and close it with the other half. Now bite it, and tell me how good this is !!!!
