Sensational no waste Pumpkin Soup

Yes, I’m making another pumpkin recipe and there will be plenty of them this fall. Hope you are fine with that! The Sensational no waste Pumpkin Soup of the day is a creamy baked pumpkin and carrot soup with pumpkin chips and tofu ricotta. Indeed, this soup is the perfect comfort food for a lunch break or cold evening.

Sensational no waste Pumpkin Soup

WHAT DO YOU NEED?
For the soup


Pumpkin;
Carrots;
Onion;
Veggie Stock;
Thyme,
Origano dry and fresh.
Black Pepper,
Salt.

For the chips

Pumpkin peal
Thyme,
Origano dry and fresh.
Black Pepper,
Salt.
Olive Oil

For the ricotta

Tofu
Nutritional Yeast,
Origano or Basil
Lemon juice
garlic powder
Black Pepper,
Salt.
Olive Oil

Let’s get to it

Step 1. Peel your pumpkin with a knife. Collect all the peal and place it aside. Cut in slices and place them on a baking tray with baking paper. Peel and cut also the carrots and the onion in slices. Then place them on the baking tray as well. Following, season it with 1 or 2 tablespoons of olive oil, oregano, thyme, salt, and pepper to taste and a branch of fresh oregano. After that, place in the oven for 40-45 minutes at 180°C and grill at the end. Roast it until soft and tender. Then place all the pumpkin, carrots, and onions, with a ladle pour the veggie stock and blend it together. Add the veggie stock until the soup is creamy and homogenous.

Take all the pumpkin peals, season them in a bowl with the same ingredients but a bit more salt and olive oil. Place them in the ventilated oven until they get crispy and crunchy.
Meanwhile, the chip gets ready in the oven, prepare the tofu ricotta. Consequently, take the tofu out of the fridge which was already pressed overnight. Then in a bowl add the tofu, nutritional yeast, salt pepper, lemon juice, oregano, or basil and blend it together. As a result, you should have soft paste just like ricotta.

It’s time to assemble.
Pour the soup on a plate, sprinkle it with some smoked paprika. Then add the pumpkin chips and a full spoon of ricotta. After that season it with chilly flakes, pepper, and olive oil. And boom the Sensational no waste Pumpkin Soup is ready!
