Refried Beans

Refried beans, Frijoles Refritos in Sanish, are a must to try Mexican dish and a great element to add in burritos, fajitas, enchiladas or even salad. Traditionally they are cooking with animal fat but here I propose a vegan recipe and I promise that would taste the same, with their trademark soft velvety texture.

I lived in a Mexican family for 10 months in United States and this dish was always on the table. I loved this smashed and creamy beans. Usually I paired them with some guacamole and hot sauce in a cheesy quesadilla.

For this recipes, the Mexican family I used to live with, prepared them with pinto beans which are the Portuguese Fejao Manteiga. This time I used the canned precooked one However, you can use the dry ones. By soaking them overnight and cooking them for 1 hour. I have noticed that the precooked ones are usually more suitable for this dish. Since their consistence is really soft and they are easy to smash.


Chop an onion, a garlic clove and drop it into a pot with olive oil in abundance. Fry them until golden and add few bay leaves. Then add a spoon of paprika, a table spoon of cumin powder, salt and black pepper. Now it’s time for my secret ingredients. Get your vegan sausage or chorizo and drop the inside into the pan smash it with a spoon and stir well. Afterwards is time to drop the beans into the pan with the other ingredients. To give it a spicy twist I chopped a Jalapeño, don’t do this if you are a beginner!

Let it cook slowly on low heat for as much time as you can. Most of the time, I leave it on the stove for 3 hours. However, the longer the better. If you feel that the water is evaporating too fast add some once in a while. To give some more taste you can add vegetable broth instead.

After 3 hours, take the pan out of the stove, be careful is really hot. Take half of the beans out of the pan and blend them with a blender or an immersion one. Pour it back in the pot and mix them together until obtaining that trademark consistence.

I like to present the dish in a pot with some tiny slice of onion, coriander leaves, oil salt and pepper to garnish all.
if this Refried beans are not enough for you you can add some vegan cheese on top and let it melt.
