Pumpkin Oatmeal is a super fun way to incorporate vegetables to your morning oatmeal. Easy and Healthy it’s super fast to make. Not only it’s low in calories but it has so many different uses.
It’s one of my favourite seasonal ingredients.
Pumpkin gives you a hefty dose of beta carotene, which is partially converted into vitamin A. Vitamin A can help your body fight infections.
First, it’s rich in beta carotene, which helps keep your vision sharp by helping the retina absorb light
Second, the combination of other vitamins and minerals in pumpkin may protect against age-related macular degeneration.
The antioxidants found in pumpkin are important for skin health. These include beta carotene and vitamins C and E.

procedure for Pumpkin Oatmeal
Let’s start by making the pumpkin pure. You can either buy it already made or bake in the oven for over 40 minutes your favorite type of pumpkin.
Let it cool and scoop out the pulp and place it into a bowl.
Make your outs by mixing oats, vegetable milk, pumpkin and cinnamon together. Cook on a stove for 10 minutes or microwave for 3 minutes.
Enjoy it with your favorite toppings: I used home made granola, here you can find the link to my recipe, grilled bananas, vegan yogurt and agave syrup.
