The ultimate Mushroom Souvlaki

Lately this Mushroom souvlaki is my favorite recipe, it’s perfect for hot summer days and it’s super tasty.

Souvlaki, is a popular Greek fast food consisting of small pieces of meat and sometimes vegetables grilled on a skewer. It is usually eaten straight off the skewer while still hot

All the ingredients

Oyster mushrooms
Olive oil
Liquid smoke
Bay leaves
Plant base greek Yogurt
Pita wrap

Let’s make this Mushroom souvlaki

Let’s start by preparing the marinade. Grab a large bowl and start grating on a cheese grater a garlic clove and an onion. Then add smoked paprika, paprika, cumin, origano, smashed bay leaves, salt and pepper and olive oil mix well until having a dense consistency.
Then drop the mushrooms into the bowl and massage them with the marinade. Instead of using skewer I used the origano stem, it’s a cool way to waste less and give the mushroom a bit more taste. So I took each mushroom and poke it with the oregano stem.

Place a non-sticky pan over the stove and when it’s hot place the skewer in the pan and grill them 5 minutes each side. In the meantime wash your veggies. Cut the tomatoes, salad and cucumber.

For the vegan tzatziki
Grab bowl and add 2 or 3 spoon of greek vegan yogurt, then grate a clove of garlic, half pealed cucumber. Squeeze half of a lemon and add the juice to the yogurt with some olive oil salt and pepper. Mix well and set aside.

let’s assemble

Grab a tortilla or a pita wrap. Spread with tahini and place the mushroom suvlaki on top add tomatoes, cucumber and salad and top with some tzatziki sauce. Roll the pita and serve with some of that tasty tzatziki.
