The gyros history comes from grilling a vertical spit of stacked meat and slicing it off as it cooks was developed in Bursa in the 19th century in the Ottoman Empire, and called doner kebab (Turkish: döner kebap). Following World War II, doner kebab made with lamb was present in Athens ,introduced by immigrants from Anatolia and the Middle East, possibly with the population exchange between Greece and Turkey. A distinct Greek variation developed and served with tzatziki, which later became known as gyros.
My version of the gyros is with a wrap and seasoned mushroom as a meat substitute, vegan garlic mayo, Greek Salad and vegan tzatziki sauce. Read below for the full recipe.
What do you need?
Pita wrap or normal wrap
mushrooms
cumin
Coriander powder
Cinnamon
Paprika
Thyme
Origano
Garlic Powder
Salt
Pepper
Extra virgin Olive Oil
Tomatoes
Onion
Olives
Salt
Pepper
Extra virgin Olive Oil
Cucumber
Garlic
plant base yogurt
Sat
Pepper
Lemon juice
Procedure
Firstly, prepare the Greek Salad. Start by cutting the onion in thin slices, and do the same for the tomatoes, cut some olives and place all into a bowl. Consequently, season with salt, pepper, and Extra virgin Olive Oil and oregano and mix well and set aside.
For the tzatziki sauce, wash a cucumber. then grate it into a bowl do the same with a garlic clove, add your favourite plant base yogurt but remember that it should be natural taste. If you can get plant base Greek Yogurt it would be the best. then add Salt Pepper Extra virgin Olive Oil and mix well.
Now, let’s prepare the gyros spice mix. Firstly, in a little bowl add together a spoon of ground cumin, a spoon of ground coriander, a spoon of paprika, a spoon of ground garlic, a spoon of cinnamon, a spoon of thyme, a spoon of oregano, salt, pepper, and Extra virgin Olive Oil and oregano and mix well and set aside. Then cut all your champignon mushrooms and pour the spice mix on top. Mix well, then pass them on a hot pan with olive oil and some onion and pan fry them until cooked.
After that, warm up your pita wrap. And then, place it above a piece of aluminium foil. Consequently, spread some vegan garlic mayo form Vegan Junkies, add some fresh lettuce, the Greek Salad and the gyros mushroom, close the wrap and pour the tzatziki like there is no tomorrow. If you like you could add some fresh fries and vegan feta.
