Prepare yourself to experience the scariest burger ever. OPS! I meant tastiest. This Goosebumps Burger is perfect for the fall season and for your Halloween theme dinner. You’ll get real goosebumps I promise.
This recipe put together two of my favorite ingredients. I am the hugest fan of pumpkin and I wanted to try it inside a burger. So the pumping time has come. As well with caramelised onion, a MUST for all good burgers in my opinion. The Goosebumps Burger consists of smoked tofu marinated in Bbq sauce, pumpkin pure, vegan cheese, caramelised onion, and pine nuts all inside Vegan Junkies BIG Purple Bun.
Goosebumps Burger how to make
For the pumpkin pure, try to get one of those green pumpkins, trust me they are the best. Preheat the oven and slice the pumpkin into several parts.
Bake it at 180° for 30 minutes then switch to grill until it loses the water and it gets crunchy. Let it cool down. Scoop out the pumpkin from the peel and smash it in a bowl with some cinnamon and olive oil, if you like you can also add some nutmeg.
Press the smoked tofu overnight around a kitchen towel with a heavyweight on top, to remove all water in excess. Prepare a bowl and get your vegan BBQ sauce, I got my from Vegan Junkies, of course, a tablespoon of soy sauce, oil, thyme, and rosemary. Let rest for 30 min to 24 h the more the better. When your tofu is well marinated pan-fry it with a spoon of olive oil. Turn it upside-down and drop one of two slices of vegan cheese. Cover the pan with a lid so the cheese melts easily, if you can’t manage in this way. Smart advice is to use some hot water to stem it up. With this method, your cheese will melt 100%!
Meanwhile cut finely your onions, and please don’t get too emotional! Heat up a non-stick pan, drop some tablespoon of extra virgin olive oil. When hot drop your onion sliced, add some salt to taste, two tablespoons of sugar, black pepper, and balsamic vinegar from Modena.
I get it at home in Italy but you can easily find it online. My personal favorite is from Bosco del Fracasso, it’s a Biological little farm close to my home town, they made the vinegar themselves and age it for 7 to 16 years.
Cook the onions for 10 minutes, you might add some water or wine to shimmer until a dark gold brown. it’s time to assemble.
Get your Vegan Junkies purple bun cut it in half. Afterwards, spread the pumpkin pure on the bun. The place the bbq tofu with the melted cheese on top. Then add the caramelised onion and sprinkle some pine nuts on top, cover up with the other half and its ready to teste.
