The Authentic Gazpacho Andaluz

just came back from Spain and I have so many vegan recipes to share with you. Let’s start with the most simple and refreshing of all. The gazpacho.
For the ones that don’t know it, Gazpacho is a fresh soup made with tomatoes, cucumber garlic, and onion, some put also bread. This light and cold soup it’s perfect for the summer days, to beat the heat. Indeed almost everyone in southern Spain drinks it. It’s super easy to make, you don’t need to buy any extra ingredients and it’s almost effortless.
So let’s check what you need to prepare it.

Ingredients for the Gazpacho Andaluz

  • 5 tomatoes
  • Half Onion
  • 1 small cucumber
  • 1 large clove of garlic
  • White vinegar 5 ml
  • extra virgin olive oil 60 ml
  • cold water 180 ml
  • pinch sea salt

Procedure.


Firstly cut the tomatoes in large pieces. Secondly, Do the same with a withe onion. After that, Peal the cucumber and slice it in chunks. And then,Peal a garlic clove. So, In a bowl add all these ingredients, and if you want to add a bit of stiff old bread. Then, Add extra virgin olive oil and a splash of white vintager and salt and pepper to taste. Finally, Blend everything together and serve in a bowl. At last, You can garnish it with some olive oil, salt pepper and cucumber slices.
