Born in Islamabad to a traditional Pakistani family, Mubashir Hussain, is the man behind Bash Food. Before calling Lisbon his house, Bash lived in Paris and London, but could not find the perfect blend of nature and urban life he grew up with in his hometown. From the first time Bash stepped foot in Lisbon, he knew this was the place. Despite his high education from early business studies in London, our spice boy was first led to the limited stereotypical professional opportunities many from his origin are faced to make his way around Lisbon. In 2017, Bash’s path gets crossed with the to-be Vegan Junkies founders. It did not take long for everyone to agree that Bash was way better infusing spices into sofritos than fixing phones. Though never a fully Vegan Junkies staff members, Bash was always an inspiration. His boldness to use spices, herbs and sauces has become part of our ethos, and to watch the announcement of his intention to deep dive into the cooking world was a pleasant surprise for us. Very connected to its roots, family is where Bash finds his inspiration. Bash confides to us he tells us that he keeps a WhatsApp group with his sisters and mom where recipes are traded and then converted into plant based delicacies.
Plant Base‘s favorite is his Smoked Cauliflower curry. He starts by roasting the cauliflowers in our pizza oven with a blend of coriander and cumin seeds, lemon and salt, and then smokes them with handpicked flaming pines. It is then served with fresh basmati rice, and a smooth red curry.
When not behind the frying pan, you will find Bash seeking for new jazzy tunes for his playlist.
